competitive roguelikes?
Are there any competitive dungeon-crawling games out there? I'm talking about actual interaction between parties, not just high-score tables.

If you are actually talking about roguelike PHP games (meaning they give you maps made of ASCII characters) then I doubt it. Roguelikes are kind of specialized and have really not made the jump to PHP games. If you mean just any PBBG, I am sure there are, just maybe not fantasy games. I know Urban Dead has no mobs, and pits other players in the role of the zombies.

I wasn't thinking of massively-multiplayer games where everyone can be competing. I was thinking more like the old Dungeon or Talisman board games, where everyone starts at once and there's a definite end to the game and a winner.

I haven't really seen a game like that. However, there are thousands and thousands of browser-based games (and it is hard to Google for gameplay elements), so it is hard to tell for sure. Maybe someone else has seen something like that.
