Even though I hate it to admit but mexican cuisine is everywhere in central america, especially in Guatemala they almost have the same accent. Even though there're few only Mexican food restaurants in my city the other 'Honduran' reustaurants serve the same thing: Tacos, Gringas, Chimichangas, 'Semitas' or 'Peinadas' in Mexico, etc.
Also almost everyone in central america eat Tamales in christmas. And of course we all eat tortillas

. So yeah maybe some foods like halls said actually came from Spain, since Spain conquered everything but US and Brasil. But there are also lots of food that came later when every country became independent. For example El Salvador is famous for serving 'Pupusas' it's a tortilla but with 'quesillo'(a special cheese) inside, Nicaragua for their Tamales. In Honduras we created the 'Baleada' it's a folded tortilla with smashed beans inside, cream cheese, white butter and smashed eggs if you want (you can make lots of combinations.), but typically its that. That dish it's originally from Honduras, and it may look like a burrito but for god sake it's not, with all respect a burrito is a bad combination inside a tortilla, eat baleadas they make you stronger.
Also almost all of the dishes we eat, are well known and served in the rest of central america.
halls I think you meant the aztec civilization. Mayans in the other hand weren't that big, and lived in Mesoamerica (Belice, Guatemala, Honduras and El Salvador).
